This is one of the best fortified wines made from Pedro Ximénez. It is crafted by Ximénez-Spínola, one of the most traditional wineries in Spain.
The Pedro Ximénez grapes were hand selected and then sun-dried until they became raisins. The process of sun drying the grapes into raisins limits the total yield of grapes by 30%.
Then this wine was aged in oak barrels with the traditional “criaderas y soleras” process. Every year, a certain amount of wine is extracted from the bottom rack barrels and then the resulting wine is bottled unfiltered and un-stabilized.
This is a very limited production. The Ximénez-Spinola Pedro Ximénez bottles are always individually numbered with the year it was produced on every label.
We love to enjoy this Spanish fortified wine with foie gras, blue cheeses, chocolate based pastries, and we would highly recommend trying this fortified wine alone as well as it will seduce you with the intense sweetness of Jerez.
