Produced by bodega Venta d’Aubert, Venta d’Aubert Dionus is a Bordeaux blend of Cabernet Sauvignon and Merlot made from certified organic vineyards grown in clay-limestone soils in the designation VT Bajo Aragón.
Interestingly, some years ago the winery started a a process of soil regeneration using vegetal compost and animal manure, following the guidelines of biodynamic agriculture.
The grapes were picked by hand. This Spanish red wine was fermented in stainless steel tanks at a controlled temperature. Then it was macerated with the skins for 3 weeks, and subsequently transferred into French oak barrels. Finally, Venta d’Aubert Dionus 2014 completed malolactic fermentation and was aged for 30 months in oak.
We suggest that you decant this red wine from Bajo Aragón so that it can fully express its qualities.
