Despite the fact that Castile has never had a reputation for its white wines, Vallegarcía Viognier is a varietal Spanish white wine that should not be overlooked.
Produced by the Pago de Vallegarcía winery, this varietal Viognier is sourced entirely from a 3-hectare parcel located in a pristine environment, surrounded by forests, in the very heart of the Toledo Mountains.
Harvested by hand, the grapes were fully destemmed and then cold-soaked for 12 hours at a low temperature.
Then 80% of this white wine from Toledo was fermented in stainless steel tanks, and the rest completed the process in French oak barrels.
After that, Vallegarcía Viognier 2020 from DO Pago Vallegarcía was aged on its lees in those same barrels for a period of 6 months.
Finally, this white wine from Castilla y León was further aged for 6 months in the bottle prior to its commercial release.
