Crafted by the Masia Can Tutusaus winery to celebrate its 25th aniversary, VallDolina Brut Gran Reserva is a Cava produced from certified organic vineyards located in the area of Massís del Garraf, a limestone mountain range overlooking the Mediterranean at a 30-minute drive from the city of Barcelona.
Made from a traditional blend of Macabeo, Xarel·lo, Parellada, plus a droplet of Chardonnay, alcoholic fermentation of this organic Cava took place at a controlled temperature of 16ºC. Then this Spanish sparkling wine was bottled and added sugar and yeasts to complete secondary fermentation, in this case at a temperature of 13ºC.
Aged for 48 months on its lees, disgorging was performed manually, that is, without freezing the upper bottleneck. Finally, VallDolina Brut Gran Reserva 2018 was added a tiny amount of dosage liquor, the well-known «liqueur d’expedition», to harmonise it and round it off.
This elegant Cava from Penedès will add luster and flair to a whole meal.
