Produced by Vinyes Domènech, Rosat de Mitjanit is an interesting varietal Spanish rosé wine made solely from Hairy Grenache. The grapes, incidentally, come from former Cabernet Sauvignon vines, which were regrafted in 2011.
Situated in DO Montsant, the organically and biodynamically farmed vineyards were meticulously harvested in late September. Once in the celler, they were kept at a temperature of 2 to 4ºC, destemmed, gently pressed, drawn-off, and fermented with indigenous yeasts.
After that, this rosé wine from Montsant was aged for 5 months on its lees.
Finally, Rosat de Mitjanit 2021 was gently filtered and bottled.
Pair with spicy pasta recipes and Thai cuisine.
