Produced by Masia Can Mayol under the Clàssic Penedès label, Refugi Brut Nature Reserva de Loxarel is made from certified organic vineyards.
Virtually a varietal Xarel·lo, the grapes come from over 70-year-old vines planted in the Garraf mountain range, a limestone-rich subzone of DO Penedès. This Spanish sparkling wine is complemented with 8% Chardonnay.
As for the winemaking process, half of the Xarel·lo base wine was fermented in French oak barrels, and the other half completed the process in stainless steel tanks.
Then Refugi Brut Nature Reserva de Loxarel 2018 was bottled, went through secondary fermentation and was aged for about 32 months in the cellar.
No shipping liquor was added to this organic sparkling wine after its disgorgement.
