This exceedingly interesting Spanish sparkling wine comes from a single vineyard located in a privileged area of Penedès. The place is so special that it has been granted its own geographical indication, Vino de la Tierra Conca de l’Anoia.
More specifically, Raventós i Blanc De La Finca was produced from grapes coming solely from Vinya dels Fòssils. As its name suggests, the main feature of the site is a soil full of marine fossils. That fact brings to the wine a distinctive, saline minerality.
This wine is made from a blend of 60% Xarel·lo, 30% Macabeo and 10% Parellada, sorted from 8 plots farmed following biodynamic procedures.
Harvested by hand, the grapes were gently crushed and fermented in stainless steel tanks. Then the blend was made, after which this Brut Nature Gran Reserva sparkling wine was bottled in order to complete secondary fermentation.
Finally, Raventós i Blanc De La Finca 2019 was aged for a minimum of 30 months in the cellar.
Interestingly, the first vintage of this organic sparkling wine was the last one crafted by Mr. Josep Maria Raventós i Blanc, the founder of the winery, before his demise.
