The flagship Spanish white wine of the prestigious bodega Pazo de Rubianes from DO Rías Baixas bears the name of the winery.
A varietal Albariño, Pazo de Rubianes is sourced from the highest vineyards in the estate. Located in the Salnés valley and oriented to the south-west, they are planted on slopes with shallow soils composed of granite. This is generally considered the best soil type for growing Albariño.
Hand-harvested and cold-macerated, the grapes were fermented in stainless steel tanks under controlled temperature. After that, this white wine from Rías Baixas was aged on lees for 3 months with periodic stirrings of the lees.
Finally, Pazo de Rubianes 2020 was cold-stabilized before being bottled.
This savoury white wine aged on lees will pair excellently with fish recipes, shrimp and sushi.
