Produced by the Perelada Group through its brand Finca La Melonera, Payoya Negra is made from Syrah, Tintilla de Rota, Grenache and the little-known Romé.
The Finca La Melonera project is aimed at recovering some long-forgotten native grapes from the area of DO Sierras de Málaga.
The grapes were separately harvested in tiny, 7-kg. boxes. Then this Spanish red wine was macerated and fermented in stainless steel tanks.
After that, this red wine from Málaga was aged in big French oak vats from Allier for 12 months. Finally, Payoya Negra 2020 was aged for a further months in the cellar before its release.
Decant this Crianza red wine 30 minutes before drinking.
Incidentally, «Payoya» is the name of an indigenous goat breed from the Ronda Mountains. That goat breed also gives its name to Payoyo, an absolutely superb cheese made from its milk.
