This is the new vintage of the well-known Parxet Gran Reserva M.C. The name is a reference to Maria Cabané, the wife of Bodegas Parxet’s founder. Some years ago, the winery was acquired by the Carlyle Group, and merged with Carlyle-owned Codorníu.
It is made from Parellada, Pansa Blanca (Xarel·lo) and Macabeo, harvested at their optimal ripening point.
Once in the cellar, the grapes were destemmed and traditionally vinified. Then this Cava from Alella was bottled and added yeasts and sugar to complete secondary fermentation.
Finally, Parxet Gran Reserva M.C. 2016 was aged for a minimum of 30 months. After being disgorged, this Spanish sparkling wine was added a tiny amount of sugar, resulting in a Gran reserva extra brut.
This Cava from Alella will perfectly accompany a whole meal.
