The main feature of Parxet Brut Nature is that, instead of Xarel·lo, this Spanish sparkling wine of Bodegas Parxet is made principally from Pansa Blanca.
Grown in sandy soils in the DO Alella, its native region, Pansa Blanca is a local variant of Xarel·lo with a distinctive character. The compositon of this Cava is completed with the traditional Macabeo and Parellada varieties.
Harvested at their optimal ripening state, the grapes were destemmed and carefully selected. Then they were fermented in stainless steel tanks.
After that, Parxet Brut Nature completed secondary fermentation in the bottle and was aged for a period of 20 to 30 months.
No dosage liquor was added to this Cava from Alella after disgorging it. Thus, it is bone dry and very fresh.
