To say that Parés Baltà Radix Rosé from the Parés Baltà winery is a Spanish rosé wine with the soul of a red wine would not be a totally inappropiate description of it.
Because of its substantial body and structure, this is indeed an unconventional organic rosé wine from Penedès -it has very little in common with, say, pale-pink Provence rosés.
A single parcel varietal Syrah, this young rosé wine was sourced from Finca Els Pujols, a vineyard with clay-limestone soils situated at an altitude around 270 metres, in the High Penedès area.
The winemaking process started with a pre-fermentative cold maceration for 6 hours, aimed at extracting aromas and colour. After that, Parés Baltà Radix Rosé 2021 was fermented under controlled temperature for 5 weeks.
This elegant rosé wine from Penedès will pair excellently with rice dishes, pasta and oily fish recipes.
