This is the new vintage of Pardas Xarel·lo Pur, a varietal Xarel·lo produced by Celler Pardas.
A splendid expression of Penedès’ most representative and age-worthy native white variety, this Spanish white wine is sorted from two old, low-yielding, organically farmed vineyards: «La Vella», planted in 1979, and «El Muc», in 1972.
Harvested by hand and selected on site and in the cellar, the grapes were refrigerated, destemmed and gently pressed before cold-macerating for 12 hours with the skins. Then, only 55% of the free-run juice was then fermented in French oak barrels and concrete diposits.
After that, Pardas Xarel·lo Pur 2019 was subsequently aged for 8 months. Finally, it was stabilized and clarified before bottling.
