This is the new vintage of Pardas Collita Roja, produced by Celler Pardas.
A very interesting Spanish red wine, this varietal Sumoll comes from two organically farmed vineyards planted in the mid XXth century in the nothern area of Penedès.
Sumoll, by the way, is a variety which produces wines with a light body, lively tannins and a remarkable acidity and crispness.
The grapes were hand-picked in September. Meticulously selected, they were first macerated with the skins for two weeks. After both alcoholic and malolactic fermentations, this organic red wine was transferred into oak barrels, concrete eggs and stainless steel tanks.
After that, Pardas Collita Roja 2016 was aged for 6 months. Finally, it was bottled and aged for some months before its release.
It is important that you decant this red wine from Penedès for a substantial period of time before you drink it. Sumoll is a reductive variety which usually opens quite tight.
