This is a one-of-a-kind Spanish red wine. A Vino de Finca (single vineyard wine), Pago de Los Capellanes El Picón is only produced in exceptional vintages.
A tiny, 1.6 hectare plot with clay-gravel soils, Finca El Picón is planted solely with low-yielding Tempranillo vines.
After a meticulous harvest, the grapes were destemmed and refrigerated for 24 hours. Then they were transferred into French oak vats, where this wine from Ribera del Duero completed alcoholic fermentation with indigenous yeasts and was subsequently macerated for some time.
Malolactic fermentation took place in French oak barrels. After that, Pago de los Capellanes El Picón 2018 was also aged for 22 months inside a cave located 10 metres below the ground.
During the process, this red wine from Ribera del Duero was racked four times. Bottled unfined and unfiltered, it was aged for a minimum of 24 months before its commercial release.
