The excellent Olivares Dulce Monastrell is, as one might expect, made from Monastrell, one of Spain’s most important indigenous varieties.
The grapes were harvested in late Autumn, at a time when they had reached full maturity and had a high sugar content.
They come from the best plots of the winery, planted with ungrafted pre-phylloxera vineyards located at the very heart of Jumilla.
Once in the cellar, the grapes were partially fermented to preserve the naturally sweet character of the wine and macerated with the skins.
To showcase the fruit in pristine condition, Dulce Olivares Monastrell 2020 was not aged in oak. Instead, it was bottled in January 2021 and aged for 2+ years in the cellar.
This varietal sweet red wine of Bodega Olivares is a little-known gem from Jumilla.
