A varietal Albariño, Galicia’s best known white grape, Lagar de Cervera is produced by Lagar de Fornelos, a branch of Grupo La Rioja Alta.
The grapes were sourced from vineyards surrounded by forests along the course of the Miño river. The plots are scattered across the Salnés county, DO Rías Baixas.
Harvested by hand, the grapes were first cooled and then macerated at 10ºC for about 10 hours. Then they were destemmed and crushed.
This varietal young white wine was fermented at in stainless steel tanks at a temperature of 15ºC. It is worth mentioning that, after that, this Spanish white wine did not went through malolactic fermentation.
Finally, Lagar de Cervera 2022 was aged on its lees to improve its creaminess and roundness.
Pair this white wine from Rías Baixas with shrimp, rice dishes and fish and chips.
