In the southern Catalan region of Terra Alta, there is a tradition of producing white wines using the skins, stems and seeds of the grapes. A white wine produced in this manner is called Brisat (from «Brisa», the local name that designates the solid part of the grapes).
The hugely interesting La Foradada de Frisach is made in such a a way.
A single varietal White Grenache (or Vernatxa Blanca, as it is known in the region), this Spanish white wine is made from grapes coming from a single estate.
First, the wine must was fermented with the solid part of the grape bunches for some days. Then, after a gentle pressing, this organic white wine wine was aged for 9 months on its lees in stainless steel tanks, with no lees-stirrings whatsoever.
Finally, La Foradada de Frisach 2022 from Celler Frisach was bottled unfiltered and naturally stabilized by the winter cold.
