This a rather uncommon Spanish sparkling wine, because it is the result of combining several vintages. This method is very common in France, but very rare in Spain.
Specifically, L’Origan Brut Nature is made from 45% Xarel·lo and 25 Macabeo of the 2010 vintage, 10% Parellada of the 2010 vintage, 15% Chardonnay of the 2008 vintage, and 5% Chardonnay of the 2007 vintage aged in oak barrels.
This non-vintage Cava produced by bodega L’Origan-Gastón Coty was vinified following the traditional method. Alcoholic fermentation took place in stainless steel tanks. After that, L’Origan Brut Nature was blended, bottled and aged for a minimum of 100 after completing secondary fermentation.
Complex and refined, this Cava from Penedès will nicely accompany an entire meal.
