A single vineyard varietal Xarel·lo, Gran Caus Xarel·lo Pairal is produced from vines grown in a calcareous soil rich in seashell fossils. The vineyard, called Finca El Cirerer, was planted in 1954. It is located a very particular area: Massís del Garraf (the Garraf Massif), a mountain range of marine origin located 30 km from Barcelona.
The vines are cultivated following organic farming practices, using no herbicides or pesticides.
The grapes of this highly idiosyncratic Spanish white wine of celler Can Rafols del Caus were harvested by hand.
Then, this old-vines Xarel·lo from Penedès was spontaneously fermented, as it was tradition in the region, in new chestnut tree barrels. Afterwards, it was aged for a period of 4 months.
Finally, Gran Caus Xarel·lo Pairal 2019 was aged for 24 months in the bottle prior to its release.
