From the moment he began producing wines, Carlos Esteva, owner of the Can Ràfols dels Caus winery, had the intuition that some foreign varieties could adapt successfully to the unique terroir of the Garraf Massif, a subzone of DO Penedès with a distinctive character.
Thus, he decided to craft Gran Caus La Calma solely from Chenin, a white variety native to the Loire Valley. The results proved that his hunch had been correct.
This remarkable varietal Spanish white wine is produced from over 30-year-old vines planted in a less than 1-hectare vineyard with calcareous soils peppered with marine fossils, a feature which gives the wine an exceptionally mineral character.
Carefully harvested, the grapes were cold-soaked and gently crushed. Then Gran Caus La Calma 2018 was fermented and aged on its lees in French oak barrels for 4-5 months with periodic stirrings. After that, the wine was aged for 24 months in the bottle prior to its commercial release.
We recommend that you drink this organic white wine from Penedès cool, not chilled.
