Produced by Cava Gatell, an up-and-coming boutique winery from Penedès, Gatell Initial Brut Nature Gran Reserva is a very interesting Spanish sparkling wine.
This is for two reasons. First, the traditional Cava blend of Macabeo, Xarel·lo and Parellada is here complemented with a small amount of Malvasia, a variety seldom used for producing Cava.
Second, the four varieties went through a non-conventional vinification. First, each was separately fermented in French oak barrels and aged for 3 and a half months. After that, this cava brut nature was blended and aged in the barrels for another 3 and a half months.
Then Gatell Initial Brut Nature Gran Reserva 2016 was bottled to complete secondary fermentation. After that, it was aged for 40 months minimum before being disgorged with no suggar added.
This is a versatile cava gran reserva. Drink without food, or enjoy through a multi-course meal.
