Produced by L’Olivera Cooperativa, Eixaders is a varietal Chardonnay from the DO Costers del Segre.
Harvested by hand and gently crushed, the grapes were fermented in 25% French and 75% American oak barrels, 25% new ones. After that, this Spanish white wine also went through malolactic fermentation.
Then this white wine from Costers del Segre was aged for 3 to 4 months on lees with frequent stirrings.
We suggest pairing Eixaders 2021 with creamy cheese and white meat dishes.
This is a mildly creamy, smooth organic white wine.
It is worth noting that, for more than two decades, L’Olivera Cooperativa has been working within its community in favour of the economic and social integration of the intellectually disabled. An exemplary coop indeed.
