This is the new vintage of Ébano Salvaje, a wine produced by the Ébano Viñedos y Bodegas winery.
A varietal Tempranillo, this Spanish red wine is made from the oldest estate vines, located in the heart of Ribera del Duero. They are perched at an altitud over 800 metres, and have very low yields.
The harvest took place at the end of October. Maceration and alcoholic fermentation of this Crianza red wine was carried out in stainless steel tanks, with a 70% of the grapes undestemmed.
After that, Ébano Salvaje 2017 was transferred into French oak barrels, where it completed malolactic fermentation and was aged for 14 months.
Finally, before its commercial release this red wine from Ribera del Duero was aged for a minimum of 12 months in the bottle.
