This Spanish sweet white wine was born in the sunny, southern Spanish region of Montilla-Moriles. However, instead of being aged through the traditional soleras and criaderas system, Don PX was produced from concentrated wine must.
Thus, after late-harvesting the Pedro Ximénez grapes, they were naturally sun-dried for a minimum period of 7 days in order to achieve a high sugar content.
Then the grapes were crushed through an hydraulic press to obtain the wine must.
After that, Don PX 2019, produced by the Toro Albalá winery, was fortified with 2% wine alcohol until it reached a total alcohol content of 17%. After that, this varietal Pedro Ximénez aged for 12 months in stainless steel tanks.
This wine was not filtered prior to its bottling.
This sweet wine from Montilla-Moriles is simply exquisite.
