A naturally sweet Spanish white wine produced in the Andalusian region of Montilla-Moriles, Don PX Gran Reserva is a varietal Pedro Ximénez.
The grapes were naturally sun-dried for about 8 days. (To produce 1 litre of this sweet white wine, three kilograms of sun-dried grapes are required.) Then the wine was fermented and aged for 12 months in stainless steel tanks.
After that, this varietal sweet Pedro Ximénez was transferred into American oak barrels, and aged for 20 years. As a result of natural water evaporation, the alcohol content of the wine went from 15% to 17%.
The exceptional Don PX 1999 Gran Reserva is crafted by the Toro Albalá winery, arguably the most renowned producer of PX and Amontillados from Córdoba.
