The quality standards that the Dominio de Tares winery set from its very inception remain uncompromisingly high.
The Mencía grapes used to produce Dominio de Tares Cepas Viejas come from over 60-year-old vines located in DO El Bierzo. They are planted on slopes and terraces with clay, limestone and slate soils at 650 metres of altitude.
Harvested by hand,the grapes were selected, destemmed and fermented uncrushed in 10,000 and 20,000-litre vats. The process lasted for more than 3 weeks, with 3 daily pump-overs to foster colour extraction. Then this Spanish red wine was transferred into French and American oak barrels, where it completed malolactic fermentation.
After that, Dominio de Tares Cepas Viejas 2018 was aged for 10 months in French oak barrels. Once bottled, it was kept for a further 18 months in the cellar before hitting the market.
