This is a truly remarkable Spanish white wine. A varietal Albariño, Do Ferreiro Cepas Vellas is sourced from pre-phylloxeric vines planted in sandy soils in the Salnés Valley, DO Rías Baixas. Incredibly, the vines are over 200 years old.
The harvest was carried out manually in little boxes. Interestingly, 10% of the grapes were left in the vineyards so they could develop noble rot, an overripeness that, when appropriately managed, brings an exceptional texture and complexity to the wines.
Once the grapes were brought to the facilities of the Gerardo Méndez winery, they were destemmed and cold-soaked for 12 to 24 hours prior to fermentation.
The alcoholic fermentation of this white wine from Rías Baixas took place in stainless steel tanks using indigenous yeasts.
After that, Do Ferreiro Cepas Vellas 2021 was aged on its lees for over a period of 12 months.
The production of this white wine aged on lees is very limited.
