This is the new vintage of Davila M-100, a remarkable Spanish white wine produced by Adegas Valmiñor in the DO Rías Baixas.
A blend of Loureiro, Caíño Blanco and Albariño, the grapes were sourced from vineyards with different soil compositions and sun orientations.
Picked by hand and selected twice, the grapes were fully destemmed. Then each variety was separately vinified.
The Albariño was first cold-macerated, and then it was fermented and aged on its lees for 3 months in French oak barrels. Once the process was completed, the Albariño wine was blended with the Caíño Blanco and the Loureiro wines, which had fermented in stainless steel tanks.
The final blend of Davila M-100 2017 was then aged in stainless steel tanks for 3 months. Finally, it was bottled and aged for a minimum of 6 months before it hit the market.
This is a serious, impressively complex white wine from Rías Baixas.
Pair with white meat recipes, creamy cheese, and fish dishes.
