Coming from DO Rías Baixas, Davide 2º Año is a varietal Spanish white wine made from vineyards situated in Val do Salnés, a land area between the Arousa river and the Atlantic Ocean.
Specifically, the grapes are sourced from low-yielding, over 25-year-old trellised Albariño vines scattered across several parcels composed of sandy soils with an abundance of marine fossils.
Hand-harvested and selected, the grapes were vinified in an artisan manner. After being destemmed and crushed, they were cold-macerated in stainless steel tanks, gently pressed, drawn-off and then spontaneously fermented with indigenous yeasts for 20 days.
After that, this white wine from Rías Baixas was aged for 9 months on its lees with periodic stirrings.
Finally, Davide 2º Año 2021 from Bodega Davide was bottled and naturally stabilized before being launched onto the market.
Pair this white wine aged on lees with fish recipes, shrimp and creamy cheeses.
