Produced by the Parés Baltà winery, Cuvée de Carol is made from a blend of Chardonnay and Macabeo. This high-end Spanish sparkling wine is produced from estate-owned vineyards located in the highest and freshest areas of Penedès.
Specifically, the Chardonnay vines are at an altitude of 700 metres. Meticulously selected, the grapes were fermented in new French oak barrels, where they also spent 2 months with 3 weekly stirrings.
As for the Macabeo, it was sourced from old vines located in Finca Cal Miret. The grapes were manually selected and fermented in stainless steel tanks with daily lees-stirrings.
Once both processes were completed, the wines were blended and bottled. Then Cuvée de Carol 2012 was aged for 90 months minimum in the cellar.
This is a small-production organic Cava Gran Reserva. Pair with substantial dishes.
