The most Burgundian of all Spanish Chardonnays, Chivite Colección 125 Blanco is a remarkable Crianza white wine from Bodegas Julián Chivite.
One of the bottlings of Colección 125, which comprises the top shelf wines of the winery, the Chardonnay grapes were sourced from the very best plots of Granja Legardeta, a vineyard with clay limestone soils situated in Villatuerta, DO Navarra.
Hand-harvested, the grapes were selected twice and cold-macerated at 10ºC for 6 to 8 hours. After that, they were drawn-off and crushed with a pneumatic press.
The wine must was then fermented in French oak barrels, and then Chivite Colección 125 Blanco 2020 was aged for 12 months on its lees with periodic stirrings.
This remarkable white wine from Navarra was aged for a further months in the bottle before its commercial release.

| Nose | Complex and ever-evolving, this white wine fermented in oak has a buttery bouquet, with some smokey remembrances and notes of aromatic herbs and tropical fruit. This varietal Chardonnay also conveys a note of menthol, a deep mineral suggestion and hints of toasted dry fruit. |

| Palate | Unctuous, textured and still on the making, this wine from Bodegas Julián Chivite is superbly elegant, fresh and full of nuance. The winenicely balances fruit and oak, with flavours of nutmeg, citrus, bone fruit, white flowers and sweet spices. Long mineral finish with a creamy note. |
