Produced by El Grillo y la Luna, Canto del Grillo Cri Cri is a varietal Chardonnay wine halfway between Californian and Burgundian Chards.
The grapes are sourced from the Pelegrín vineyard, a parcel with limestone and gravel soils situated at 390 metres above sea level in DO Somontano.
Harvested at the beginning ot September, the grapes were first cooled at 4ºC, gently crushed and then pressed undestemmed. Then the wine must of this Chardonnay fermented and aged in oak was left for 24 hours at a temperature of 2ºC, thus naturally drawing off the wine must through gravity.
Then this Spanish white wine was transferred with the fine lees into new French oak barrels, where it fermented for 15 days under controlled temperature.
After that, Canto del Grillo Cri Cri 2021 was aged for 6 months in the barrels, clarified through gravity and bottled.
Pair this white wine from Somontano with baked fish recipes, creamy and semi-hard cheeses and white meat recipes.
