This is the new vintage of Cantallops Xarel·lo, produced by Agustí Torelló Sibill & Agustí Torelló Roca, the father-son team at the helm of the AT Roca family winery.
A confidential Spanish white wine, this is produced from a single parcel of Xarel·lo vines, Finca Casallarga, located in Costers de l’Ordal, one of the highest areas of DO Penedès, bordering the mineral terroir of the Garraf mountain range.
After the harvest, the grapes were fermented with indigenous yeasts. Then a 70% of this white wine from Penedès was aged on its lees in French oak barrels, and the rest was aged in egg-shaped concrete vats. Both were aged for 8 months.
Finally, Cantallops Xarel·lo d’AT Roca 2021 was bottled unfiltered and aged for a further months before its release.
We suggest that you aerate this organic white wine some time before you drink it.

| Nose | First thing we notice in this organic Xarel.lo is a deep smokey and mineral background, nuanced by aromas of pears and apples and a touch of aniseed. Rich and intrincate, this "Vi de Coster" also suggests some remembrances of bitter herbs, pastry and and fine lees. |
