Produced by Bodega Otto Bestué, Finca Santa Sabina is a single vineyard Spanish red wine made in Somontano. Interestingly, the estate has belonged to the Bestué Family for centuries.
Made from 80% Cabernet Sauvignon and 20% Tempranillo, the grapes were meticulously harvested. Once in the cellar, they were destemmed and slightly crushed, after which they were macerated at a low temperature to foster the extraction of colour and tannin.
Alcoholic fermentation, followed by a long maceration, took place in stainless steel tanks. Afterwards, Bestué Finca Santa Sabina 2019 was transferred into new and 2nd year French oak barrels, where it completed malolactic fermentation and was aged for 14 months. During the process, pump-overs were performed twice a day.
Undoubtedly, this red wine from Somontano is a remarkable value.
