Made from Verdejo, the main white variety of the Castilla y León region, Belondrade Quinta Apolonia is an interesting young Spanish white wine.
It is produced from grapes coming from Finca San Diego, a vineyard which comprises 23 plots with different soil compositions and sun orientations.
As for the winemaking process, this white wine from Castilla y León was made blending two wines. Approximately one third of the whole came from the top wine of the winery, the famed Belondrade y Lurton.
The other two thirds were produced from the youngest vineyards of the Belondrade winery, about 10 years of age.
Those two thirds were fermented in stainless steel tanks, while the remaining third was fermented in French oak barrels. All were aged on its lees for 3 months. Bottled in February, Belondrade Quinta Apolonia 2022 was aged for about a month before its commercial release.
60,000 bottles produced. Pair this organic white wine meat recipes, oily fish dishes and sheep milk cheese.
