In 1998 Bodegas Alvear began producing a collection of vintage Spanish sweet wines made solely from Pedro Ximénez, the flaghsip variety of DO Montilla-Moriles. Alvear Pedro Ximénez de Sacristía is one of them.
The grapes are sourced from the best plots of the winery. After a meticulous vinification, they were aged in the legendary «Sacristía» of Alvear, which stores the premium wines of the company.
Specifically, Alvear Pedro Ximénez de Sacristía 2005 was statically aged-that is, with no lees stirrings and no rackings-for 15 years minimum in American oak barrels.
This phenomenal sweet wine from Montilla-Moriles will pair excellently with chocolate and fruit desserts.
However, probably the best way to enjoy it is without food, as a meditation wine.
