Produced by the Vilarnau winery, Albert de Vilarnau Fermentado en Castaño is an elegant Cava made solely from Xarel·lo.
The grapes come from a certified organic vineyard planted in 1991 in Vilarnau d’Espiells, at 250 metres of altitude, a well-ventilated area within the Sant Sadurní d’Anoia borough.
Hand-harvested and selected, the grapes were kept at 10ºC on arriving at the premises. Then they were macerated for 3 hours and drawn-off, after which a portion of this Spanish sparkling wine was fermented in stainless steel tanks and the rest in new, medium-toasted chestnut oak barrels.
Blended in April, this cava brut nature was bottled and added yeasts and sugar. After completing secondary fermentation in the bottle, Albert de Vilarnau Fermentado en Castaño 2016 was aged for 72 months minimum.

The packaging of this organic Cava, incidentally, was conceived by prestigious fashion designer Antonio Miró.
